Salt Potatoes

4 pounds small potatoes (1 to 1 1/2 inch diam.) -- whole white or red
1 pound salt
water

Bring approx. 2 quarts water (or enough to cover potatoes) to a
boil. When water is boiling, stir in salt until salt dissolves.
Add potatoes. Return to a boil and boil approximately 20 minutes,
or until potatoes are soft. (Red skinned potatoes may take slightly
longer.) Drain potatoes in a colander, but do not rinse. Allow
potatoes to dry a few minutes. The salt will form a crust on the
potato skins. Serve hot, with butter (melted for dipping) or
mashing into individual servings.

Salt Potatoes are simply baby red potatoes scrubbed and boiled in
their jackets in HEAVILY salted water. Add salt to water until no
more salt will dissolve and salt crystals stay on the bottom of
the pot. Add potatoes and simmer. When the potatoes are tender,
drain the water - you'll have lots of salt residue in the pot -
and melt butter over the potatoes. Toss and serve. Simply delicious!

Hey Pastor Dave,
Where you been?? You think there any help for bigwheel, if so light a few
candles and think some good thoughts for that boy, when you get time.:)

Potatoes with Vinegar and Sea Salt

3 pounds small (1 1/2-inch) boiling potatoes
2 1/2 tablespoons tarragon vinegar or cider vinegar
Flaked or fine sea salt
1 1/2 tablespoons extra-virgin olive oil
Cover potatoes with salted cold water by 1-inch in a 4-quart pot and simmer
until just tender, about 10 minutes. (They will continue to cook after
draining; do not overcook or they will break apart.)

Drain potatoes and rinse under cold water. While potatoes are still warm,
gently toss with vinegar and salt. Cool potatoes to room temperature,
stirring occasionally, and gently toss with oil.

Yield: 6 servings
Prep Time: 5 minutes
Cook Time: 20 minutes
